M2 Ingredients has unveiled M2Brew, a specialized ingredient solution tailored for mushroom coffee applications designed to ensure that bioactive compounds remain intact during the brewing process, thus reaching consumers effectively. Based in California, the company claims that this innovative solution is unique in its ability to preserve beneficial compounds, setting it apart from other mushroom ingredients available in the market.

M2Brew is engineered for various coffee formats, including drip, pod, and pour-over methods, addressing the needs of brands aiming to offer functional benefits while maintaining taste, clarity, and performance. Research by Glass Research in 2025 indicates that 84% of over 1,000 surveyed US coffee drinkers expressed interest in trying mushroom coffee, but only a mere 12% had actual experience with it.

Sandra Carter, founder of M2 Ingredients, highlighted the inefficiency of most mushroom ingredients designed for traditional coffee systems. When such ingredients are added to ground coffee, they inadequately move through filters, leading to negligible amounts of beneficial bioactives in the final cup. She pointed out that typical full-spectrum mushroom powders tend to clog filters and complicate brewing, impeding their market readiness.

Julie Daoust, chief science and technology officer, explained that many current mushroom coffee products are instant due to the complications associated with brewing. The development of M2Brew aims to integrate functional mushrooms into brewed coffee seamlessly, catering to various service points, including coffee stations, gas stations, and foodservice programs, while also enhancing specialty cafés and home brewing experiences.
