Pablo & Rusty’s Coffee Specialist Matt Goto reveals how the roaster’s popular Peach Fizz drink was born.
Constraints are where the best drinks are born.
When we headed to MICE26 (Melbourne International Coffee Expo), the brief was simple: create a signature drink using our seasonal Peachy Keen blend, serve it fast and make it something people actually talk about. Oh, and we expected to pour between 200 and 300 of them in three hours.
No pressure.
If you’ve ever worked at a busy coffee bar, you already know the challenge. Speed matters. Simplicity matters. But a signature drink still has to earn its name. It has to be special.
That’s where the Peach Fizz came in.
Start with the coffee. Always.
The best signature drinks don’t hide the coffee, they elevate it.
Peachy Keen already had a story worth telling. We built the blend from three coffees: a rich, chocolatey Papua New Guinea, a sweet co-fermented Colombian (fermented with actual peaches, yes really), and a honey-processed Colombian that adds a gorgeous creamy texture. The result is a cup bursting with juicy stone-fruit character.
So, the drink didn’t need to do much. It just needed to lift what was already there.
Quality tonic water brings brightness and a slight saline bitterness from the quinine. Elderflower cordial adds a floral sweetness that plays beautifully with all that peach. Together, they make something refreshing, layered and just a little bit unexpected.
We served it on a classic Melbourne autumn day. Cold, wet, grey. It was a hit anyway.
Simple ingredients. Easy build. Genuinely delicious.

Here’s how:
1. Fill a lowball rock glass with ice
2. Add the elderflower cordial
3. Pour in the tonic water
4. Slowly top with your espresso shot to keep the layers
5. Serve as is, then encourage a stir to bring it all together
That’s it. Everything you need is at your local supermarket. Just buy the best tonic and cordial you can find. Better ingredients give the coffee more room to shine.
Why this matters for cafés
A great signature drink does two things: it excites customers and it doesn’t slow your team down.
The Peach Fizz is quick to teach, easy to scale and tied to a specific seasonal story. It’s a limited blend, a summer-into-autumn serve and that’s exactly what makes it feel premium. It’s not just a drink. It’s a reason to come in.
And because Peachy Keen won’t be around forever, there’s a natural urgency to it. Seasonal coffees create a creative window. Use it.
