On a transformative road trip down the West Coast, Seidy Selivanow, co-founder of Kafiex Roasters, had a revelatory experience upon tasting a coffee that exhibited distinct blueberry flavors at Black Oak in California. This moment inspired her to offer similar experiences at her award-winning coffee company, Kafiex Roasters, which she operates with her husband, Matthew. Recognized as the 2026 Micro Roaster of the Year, Kafiex emphasizes quality, sustainability, and diversity among roasters who process under 100,000 pounds of coffee annually.

Kafiex began in local farmers markets before expanding with the establishment of its Coffee Lab in 2018 and the Gastro Café in 2021. Located in Vancouver, these venues elevate coffee consumption from a quick grab to a thoughtful, slow experience. Selivanow aims to educate patrons on the diverse flavors of coffee sourced from regions like Mexico, Guatemala, Colombia, Ethiopia, and Rwanda, rotating the selection frequently to create new tasting opportunities.

The Kafiex coffee club, modeled after vineyard experiences common in the Pacific Northwest, seeks to replicate the ritualistic appreciation of coffee similar to fine wines. This program allows members to enjoy complementary pour-overs while exploring a multifaceted array of flavors. The meticulous process at Kafiex focuses on intentionality, from sourcing to brewing. Selivanow emphasizes the importance of maintaining the integrity of each coffee bean throughout the production chain, recognizing that each participant—from producer to barista—plays a crucial role in preserving the intended flavor profile.

Visitors often experience coffee prepared using traditional siphon methods, allowing for an interactive brewing process that deepens customer engagement.
