In an era marked by economic challenges, training programs are empowering individuals with vital skills for success in the coffee industry at no cost. This narrative centers on Sana Pishgoo, a talented pastry chef and owner of Shiraz Patisserie in north London, who has transformed from a cafe operator in Iran to a quintessential figure in London’s Iranian community. After a tumultuous divorce in 2013, where she lost custody of her daughter due to Iranian laws, Pishgoo fled to the UK as a refugee in 2015, seeking safety and stability.
Upon arrival, she accessed free training courses, acquiring qualifications in various culinary skills, including barista training through Well Grounded. This social enterprise not only teaches coffee-making but also emphasizes diverse career paths within the coffee sector, such as sourcing and grading beans. The program’s practical approach, including shifts at real cafes, has contributed to its graduates having a remarkable 77 percent success rate in securing employment.
Well Grounded, which has trained around 1,200 individuals since its inception, addresses the growing unemployment challenges in the UK, where the unemployment rate has spiked significantly since 2022. The founder, Eve Wagg, envisioned a supportive environment where individuals, particularly those who have faced barriers to employment, can learn and thrive. The program highlights the skill required for specialty coffee, which is increasingly popular among consumers, as evidenced by a substantial rise in American adults consuming it over the past decade.
Another success story from Well Grounded is Abdul Hasib, who became a caregiver for his mother during her battle with cancer, limiting his own opportunities for academic and professional growth. After struggling to find work, he discovered Well Grounded and completed the training program, ultimately securing a position at The Exchange Hub, where he runs a community-focused coffee bar.
At Shiraz Patisserie, Pishgoo continues to innovate with her cake creations, marrying Iranian flavors with European baking traditions. Her work has garnered affection from the community, notably including her daughter, now studying at Oxford University, who is her pride and main inspiration. Pishgoo acknowledges the inadequacies in her shop’s decor but takes pride in her culinary expertise, celebrating the achievements of both her daughter and her burgeoning business.
