How Grace Gilberg Went From Working At Waystone Coffee To Owning It – CoffeeTalk

Grace Gilberg, a stay-at-home mother, part-time barista, and business owner, officially started her promotion as Waystone Coffee’s owner and operator on September 3. The promotion was a “lovely” experience, filled with encouragement from her family, staff, and fellow River Falls small business owners. Gilberg and her team had to complete repairs before opening under new ownership, including an interior paint job, installing a chalk-drawn menu board, and wall paneling. She aimed to lean into the cozy coffee house feel.

Gilberg joined Waystone in spring 2023, looking to return to the coffee space and flex her culinary skills. After months of deliberation, she purchased the space and took on the title of owner. She made minor design updates, including custom Waystone mugs created by Red Sled Pottery and a monthly exhibit featuring local artists’ creative pieces.

Currently, Gilberg is collaborating with other local businesses, such as Mei Mei’s Cookies, to keep as much local connection as possible. Waystone sources most of its ingredients from River Falls’ Whole Earth Market Co-Op. Beyond the local collaboration, Gilberg is looking forward to hosting community events, such as book clubs and AA meetings, to fit River Falls’ needs and desires.
