Gen Z's Preference for Cold Coffee is Reshaping the Market – CoffeeTalk
The demand for cold coffee among Generation Z is significantly reshaping the coffee market. A rising preference for iced and cold brew options is leading to year-round consumption, prompting brands like Nestlé to expand their cold coffee portfolios through Nescafé, Nespresso, and Starbucks Coffee at Home, targeting both at-home and out-of-home experiences.
Nestlé highlights that half of North American Gen Z consumers are now choosing cold coffee as their first coffee experience, and one-third of global out-of-home coffee orders are for cold formats. This demographic shift is transforming cold coffee into a primary entry point into the coffee category for younger consumers, which necessitates a re-evaluation of product development, marketing strategies, and preparation methods by coffee brands.
The growth of cold coffee formats has been evidenced by a substantial increase in consumption, with non-espresso cold formats seeing nearly 42% growth projected from 2020 to 2025. US market data shows a rise in past-day consumption of non-espresso specialty coffee from 12% to 17% among adults, according to the National Coffee Association’s trends report.
Cold coffee offers a customizable sensory experience, allowing for various flavors and adaptations. Nestlé is responding with innovations such as a green coffee extract-based beverage aimed at customization and Nescafé Espresso Concentrate, which simplifies making iced coffee at home. Furthermore, the global cold brew coffee market is projected to reach nearly US$3.8 billion by 2026, with expectations for it to more than double by 2031.
The maturation of this segment raises questions about its future, particularly concerning the flavors, formats, and ingredients that will shape its evolution. Social media has fueled the popularity of cold coffee, but its roots trace back to cafés catering to a younger audience. This shift enables cold coffee to transcend its seasonal associations, fitting a variety of consumption occasions and encouraging brands to innovate.
On the technological front, Nestlé’s R&D efforts have yielded new solutions to formulation challenges associated with cold coffee. Notably, an innovative freeze-drying technique enhances solubility and texture, enabling premium soluble coffee products to dissolve seamlessly in cold beverages, thus enhancing the consumer experience without requiring specialized preparation skills.
In essence, as the coffee market adapts to a generation inclined towards cold formats, the emphasis is shifting from coffee temperature alone to a broader spectrum of taste, customization, and innovative preparation methods. Cold coffee is increasingly defined as the starting point for consumers exploring the coffee landscape, rather than merely an alternative to hot beverages.
