ASEAN Coffee Federation Launches ACAP, New Framework To Enhance Appreciation & Education – CoffeeTalk
The ASEAN Coffee Appreciation Protocol (ACAP) is a comprehensive and inclusive framework that traces coffee’s journey from farm to cup. It comprises six components: Technical Appreciation (ACAP-TA), Descriptive & Roasting Appreciation (ACAP-RA), Brewing & Perceptive Appreciation (ACAP-BA), and Skills Appreciation (ACAP-SA). Each module provides either a score or flavor profile, and its adaptable structure enables its use in training labs, cafés, competitions, and public activations across different regions and contexts.
The ACAP aims to bring clarity and confidence to coffee professionals at every level, from farmer to barista. ACI is expanding its educational platform to support ACAP’s implementation, offering new offerings such as the Farm Hand Course, Roasting & Sensory Programs, and Café Management Modules. The Sensory Course, formerly the ASEAN Grader, merges green coffee, roasting, and brewing into one syllabus, ensuring learners develop integrated sensory skills and the ability to execute, explain, and expound on coffee quality confidently.
The ASEAN Coffee Flavour Sphere, developed over three years, captures regional tasting references using fruits, spices, and ingredients familiar across Asia. The Institute has also pioneered innovative tools to support education and quality tracking, such as the Scentible Sensory Kit and the Cpin App.
ACI continues to build regional and global impact through partnerships, including barista training with tertiary institutions and signature events like the ASEAN Barista Team Championship and ASEAN-EU Coffee Summit. With ACAP, ACI sets a global benchmark for a new way of understanding coffee, respecting context, celebrating culture, and elevating the ASEAN voice in the global coffee movement.
