Coffeesai, a subsidiary of Pluri focused on cell-based coffee production, has partnered with the Instituto del Café de Chiapas (INCAFECH) to innovate and advance the manufacturing of coffee in Mexico. This collaboration aims to create a future for coffee that is resilient to climate change, land limitations, and fluctuations in the market. With plans to establish coffee cell lines and pilot-scale biofarming in Chiapas, the venture is set to leverage cutting-edge biotechnology to produce climate-resilient coffee consistently, without the need for deforestation or pesticides.

This initiative comes at a time when the global coffee market is expected to surpass US$350 billion by 2030, presenting a considerable opportunity for scalable and cost-effective production. By establishing operations in Chiapas—Mexico’s top coffee-producing region—Coffeesai aims to foster innovation and support local farmers by prioritizing sustainable practices in coffee production.

Under the terms of their collaboration, Coffeesai and INCAFECH will follow a structured three-phase roadmap aimed at mitigating commercialization risks. This includes the establishment of a coffee cell line bank, deployment of Coffeesai’s advanced 3D bioreactor technology to ensure scalability, and the exploration of full-scale industrial production facilities.

Chiapas has a robust tradition in coffee production, making it an ideal location for this pioneering work.
