With its proven expertise and ongoing innovation, Scolari Engineering has been selected by illycaffé as a partner for the expansion of its roasting facility in Trieste. In keeping with Dr. Ernesto Illy’s technological vision, the company has chosen the latest generation of production and roasting systems developed by Scolari Engineering. These highly automated systems are managed by a dedicated software application that oversees the entire production process, enhancing every stage for both quality and energy efficiency.

At the core of the plant is a sophisticated integrated system operated by artificial intelligence-based software, developed and refined through Scolari’s decades of experience. This system enables micrometric control and instant response to process changes, ensuring superior roasted coffee quality and a substantial reduction in energy usage.

Designed and constructed entirely by Scolari Engineering, the new facility at the illycaffé site will cut fossil fuel consumption by 20%, aided by chimney heat recovery (Preheater) and special high-efficiency burners. These advanced burners can operate with a blend containing up to 30% hydrogen, playing a key role in lowering CO₂ emissions. The plant is operated by cutting-edge multitasking software, developed internally by Scolari’s R&D team. This AI-driven system manages the roasting profile with predictive accuracy, optimising response times and preserving the characteristics of the final product.
