Data from Bellwether's Roasting Calculator Shows Cafés Can Potentially Cut Coffee Costs in Half by Roasting In-House – CoffeeTalk

Bellwether Coffee has unveiled its latest innovation, the Shop Roaster, designed to provide greater durability, simplified installation, and ease of operation for cafés looking to roast coffee in-house. The release coincides with new data highlighting the significant economic advantages of in-house roasting. An analysis based on over 1,000 entries into Bellwether’s roasting calculator in Q3 2026 revealed that specialty coffee buyers typically pay a median price of $14.80 per pound, often exceeding $18. By roasting their own coffee, businesses can reduce costs significantly, achieving a median payback period of approximately five months.

A recent survey conducted in October 2026 among Bellwether customers indicated that cafes that transitioned to in-house roasting reported average savings of around $2,000 monthly. Beyond cost savings, 93% of respondents are now selling coffee under their own brand, with 72% generating additional revenue from roasting, primarily through retail bag sales.

Ricardo Lopez, the founder and CEO of Bellwether Coffee, emphasized the impact of rising coffee costs and the ceiling on customer pricing, asserting that in-house roasting empowers operators to manage their costs while creating new revenue opportunities and strengthening their brand identity. The effectiveness of this strategy is exemplified by Mission House Coffee in Lynchburg, Virginia, which roasts over 200 pounds weekly and saves $5,000 a month by managing its roasting operations internally. Owner Tommy Clark highlighted three advantages of in-house roasting: cost savings, expanded sales opportunities, and enhanced brand identity.

Regarding design considerations, 76% of surveyed customers indicated the appearance of the equipment influenced their café’s layout. Addressing this, the Shop Roaster features a durable metal enclosure, available in classic white and deep bronze, catering to diverse interior styles. The electric, smokeless design eliminates the need for gas lines or ductwork; the unit ships fully assembled, ready for immediate roasting.

Moreover, the Shop Roaster simplifies operations through the new Bellwether app, allowing users to create and customize roast profiles, track roasting logs and green coffee inventory, and manage roasting schedules and reorders efficiently. Each Shop Roaster is compatible with Bellwether’s extensive coffee program, offering over 50 varieties available in U.S. and European markets. Additionally, the roaster comes with four pre-configured roast profiles, along with access to coffee advisors and a retail packaging program.

The Shop Roaster will make its debut at Coffee Fest Dallas on October 17–18, 2026, at booth #210, and is currently available for order, with expected deliveries commencing in Q1 2027.
