Test Drive: The Eureka Mignon Stark W Grinder

The most technically ambitious grinder in Eureka’s Mignon line arrives with grind-by-weight precision, a smart dialing system, and a blind upper burr.

The Mignon is one of the most recognizable names in home espresso grinding. Eureka’s compact, Italian-made range has been a staple on home bars for years, with the Stark occupying the premium end: 65mm Diamond Inside flat burrs, a metal base, silent technology, and a touchscreen that set it apart from the rest of the line. 

The Stark W, which debuted at World of Coffee Brussels 2026, takes that foundation and adds something genuinely new to it: integrated grind-by-weight technology, a redesigned blind upper burr, a larger and more responsive display, three programmable dose slots instead of two, and a smart dose correction system that hasn’t been seen in the Mignon range before. It is, in short, a meaningfully different grinder—not just a colorway update. Eureka sent one over, and I couldn’t wait to put it through its paces.

First impressions: Familiar form, new details

The Stark W occupies the same footprint as the Stark: 136mm wide, 204mm deep, 410mm tall, and 8 kilograms. The metal base and hopper lid remain, and the silhouette is immediately recognizable as a Mignon. The differences become apparent on closer inspection. The touchscreen is noticeably larger and more responsive, with a cleaner layout that now accommodates three dose buttons rather than two. 

The King Size Grind Dial—one of the better ergonomic decisions Eureka has made—returns, making fine adjustments more tactile and legible. The portafilter fork has been redesigned to fit a wider range of portafilters including naked ones without requiring tools to reposition. The 300g hopper is unchanged.

What makes the W different

The headline feature is grind-by-weight. The Stark W integrates load cells directly into the portafilter fork, weighing the dose as it grinds and stopping automatically when the target is reached. Eureka claims dose accuracy to ±0.2g, factory-calibrated and compatible with virtually any portafilter without additional setup. Insert the portafilter and grinding begins automatically—no button press required. The selected dose is stored in memory, so the workflow is genuinely hands-free once dialed in.

The Stark W also addresses a common frustration with earlier grind-by-weight systems: accidental interruption. If the portafilter is bumped or briefly shifted during grinding, the machine pauses rather than resetting, stabilizes, and resumes—finishing the full dose. Anyone who has lost coffee to a nudge will immediately appreciate this.

The blind upper burr is the other significant engineering change. Standard burr designs have holes in the upper carrier for screws and airflow. The Stark W eliminates these, creating a solid surface that generates less heat and produces lower retention in the grinding chamber—particularly relevant for the first shot of the day.

The smart dose correction system

The Stark W inherits smart technology from the Mignon Specialità Smart, and this is where daily use gets more interesting. The display includes a dial-in assistant: Enter your actual extraction time and the grinder calculates exactly how many adjustment clicks are needed to correct it—finer or coarser, expressed as a precise number of points on the stepless dial. It removes the guesswork from grind adjustment considerably. The display also shows a burr distance indicator with reference markers for espresso, Turkish, Moka, and pourover, and three dose slots allow you to store settings for different coffees switchable from the main screen.

In use

I tested the Stark W primarily on medium and medium-dark roasts on my semi-automatic setup, and dose consistency was one of the first things I noticed. The ±0.2g claim holds; shot after shot, the grinder delivers what you asked for, and the hands-free workflow is as effortless as it sounds. You insert the portafilter, wait a second, and the machine does the rest. It’s the kind of small thing you stop noticing quickly, which is exactly how a good workflow feature should behave.

The blind upper burr makes a real difference to the texture of what lands in the basket. Output is noticeably fluffy with minimal clumping, and the ACE anti-clump and anti-static system keeps the chute clean between doses (something I appreciated more the longer I used it).

The smart correction system is where I found myself genuinely won over. When a shot ran long, I’d enter the time into the display and get back a precise instruction: Go finer by two clicks. Not approximately, not “try adjusting a little”—two clicks. Overcorrecting is one of the easiest mistakes to make when dialing in, and having that precision takes a lot of the friction out of the process.

With lighter roasts I’d encourage some patience. The 65mm flat burrs at 1,350 rpm produce an even, consistent grind, but high-clarity naturals and washed coffees with narrow extraction windows need careful, incremental adjustment and honest tasting between shots. The smart system speeds things up, but you still need to pay attention to what’s in your cup—no grinder can tell you whether it tastes right.

One practical note worth mentioning: The Stark W is a hopper-fed grinder with no dedicated single-dose workflow. Retention is low thanks to the blind burr and ELR system, which makes it more flexible than most hopper-fed grinders if you do want to single-dose—but the workflow isn’t built around it. If you keep a primary coffee in the hopper and grind on demand, you won’t miss it.

Maintenance

Routine cleaning is straightforward: The bean container removes easily, the grinding chamber is accessible for brushing, and the display tracks burr usage with a maintenance counter that alerts when service is due. All Eureka ORO grinders carry a 10-year warranty.

Final thoughts

The Eureka Mignon Stark W is a genuine step forward within the Mignon line. The grind-by-weight system is well-implemented—the bump-recovery feature alone addresses one of the more frustrating characteristics of earlier systems. The blind upper burr produces a cleaner, cooler grind. The smart correction system shortens the dialling-in process. 

And the three-dose display, larger touchscreen, and redesigned fork add real workflow improvements over the original Stark. At a price point where the competition is serious, the Stark W’s combination of grind-by-weight precision, smart assistance, compact footprint, and Italian build quality makes it a compelling case—particularly for a home barista who wants professional-grade consistency without the counter space of a larger machine.
