Initially, the menu was straightforward, lacking today’s diverse offerings like Matcha Lemonades and Protein Cold Brews. Mealy notes a significant cultural shift in the beverage industry, where brands are expanding their horizons beyond coffee to meet customers’ varied preferences.
This transformation, dubbed “beverage stacking,” allows consumers to tailor drinks to their specific needs, incorporating elements like protein in cold foam and sugar-free syrups. Mealy emphasizes that modern consumers desire drinks that reflect their individuality and moment-specific cravings.
Innovation in beverage creation, according to Mealy, often arises from unexpected combinations. She cites The Human Bean’s Chai Chai Baby – a mix of chai, oat milk, and cold brew – as a successful example that surprised tasters both in concept and taste, reinforcing the idea that curiosity and experimentation drive great beverage innovation.
Moreover, Mealy points out that specialty coffee brands are increasingly becoming part of diverse customer experiences throughout the day, moving beyond traditional roles as mere caffeine providers. Looking ahead to 2027 and beyond, Mealy predicts that personalization will become integral to beverage identity, with globally inspired flavors becoming commonplace.
