In the Philippines, the Christmas season begins in September, and cafe and coffee roaster Commune collaborated with Google Philippines to create a limited edition Bibingka Latte. The drink, inspired by a traditional Filipino Christmas delicacy, features espresso and steamed milk, shredded queso de bola, salted egg, and a torched banana leaf. Google’s generative AI model, Gemini, was used to draft drink concepts, which Commune’s baristas refined. Google also trained Commune staff on AI applications to create innovative new beverages. The collaboration highlights three takeaways for brands: engaging with cultural micro-moments, using generative AI to spark new ideas, and working with diverse entities to explore how new technologies can benefit society.
