Oxygen and bright light are the greatest flavor destroyers for roasted beans, so if the shop is not vigilant about selling fresh coffee, the storage tubes will become coated with coffee oils, which degrade. Coffee beans sold in sturdy, vacuum-sealed bags and packaged with care by roasters are frequently the superior option.
